Many of you have called or emailed trying to find copies of the popular Attic Angel cookbook, The Collection ~ Simple & Elegant Recipes.  Unfortunately, the last of the cookbooks sold in April 2003.  The good news is that Attic Angel was able to sell 10,000 cookbooks in less than three and one half years  for total net proceeds of $69,322 because of your devotion.  All of this money was given to the community.

Attic Angel has a history of creating cookbooks.  Our first cookbook was produced in 1894 and consisted of 84 pages of recipes and 31 pages of advertising.  It added $100 to the treasury.

 

Attic Angel Association has now put together The Collection II ~ Simple & Elegant Recipes .  This new book, with all new recipes, is now available, designed to fit nicely next to the original Collection on your kitchen counter or shelf. 

The cost is $19.95 and the book is available at the Association office (640 Junction Road), Attic Angel Place front desk (8301 Old Sauk Road) and at many local bookstores.  Please click here if you would like one or more mailed to you.

Proceeds for the 2006-2007 fiscal year will be awarded to local non-profit organizations who apply for Attic Angel's annual Community Grants.  The annual focus chosen by the Board of Directors this year is  "Fostering Relationships between Children and the Elderly".

In the months to come we will feature recipes from the new book on this webpage for you to enjoy.  Please email us if you have a favorite that you think should be available to everyone.  Here's one from page 121, Collection II, a good comfort dish to go along with any entree.

Layered Potato Bake

Add this warm potato dish to your holiday buffet and your guest will be scraping the corners for just a little more.

Ingredients

4 large white potatoes, peeled, cubed, and cooked
2 large sweet potatoes, peeled, cubed, and cooked
1 carton (8 oz.) cream cheese with chive & onion, divided
1/2 cup sour cream, divided
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup shredded Parmesan cheese, divided
1/2 cup shredded Cheddar cheese, divided

 

Yield:  12 servings

Preheat oven to 375 degrees.  Place white and sweet potatoes in separate bowls.  Add half of cream cheese and sour cream to the potatoes in each bowl; season with salt and pepper.  Mash with potato masher or fork until creamy.

Stir 2 tablespoons of the Parmesan cheese into bowl of white potatoes.  Stir 1/4 cup of the Cheddar cheese into bowl of sweet potatoes.  Layer half of the white potato mixture and then half sweet potato mixture into a 2-quart clear glass baking casserole.  Repeat layers.   Place in oven for 15 minutes.  Sprinkle with remaining cheeses, and continue baking until cheeses are melted, about 5 minutes.

Casserole may be assembled in advance and refrigerated.  Allow for additional baking time.
